| Abstract: | Проведено дослідження динаміки зміни маси зразків яблук протягом сушіння. Обробка шару яблук електричним струмом промислової частоти та ультразвуком на початку сушіння прискорює процес його зневоднення. Проведені експериментальні дослідженні показали, що додаткове використання прямого електронагріву в процесі конвективної сушіння дозволить скоротити час сушіння продукту на 14 %, а додаткового прямого електронагріву та ультразвуку – до 22 %. |
| Description: | A study of the dynamics of changes in the mass of apple samples during drying was carried out. Treatment of the apple layer with industrial frequency electric current and ultrasound at the beginning of drying accelerates the process of its dehydration. The conducted experimental studies showed that the additional use of direct electric heating in the process of convective drying will reduce the drying time of the product by 14%, and the additional direct electric heating and ultrasound will reduce the drying time by 22%. |
