| Abstract: | Мета: виявити вплив якісних показників заготівельного молока на його технологічні властивості в умовах ДП «Аромат» філія «Сумський молочний завод» Предмет досліджень: молочна сировина та її технолгічні властивості Результати досліджень: Отже тема магістерська роботи є актуальною, тому що дає можливість реально оцінити стан в області виробництва і переробки молока. При застосуванні розрахованих коефіцієнтів значно підвищується виручка від реалізації вершків (на 5567,2 тис. грн.) і дещо знижується від реалізації казеїну (на 205,8 тис. грн.) за рахунок його недоотримання. Цей факт обумовлює і одержання додаткового прибутку від реалізації вершків в сумі 1159,2 тис. грн. та, в свою чергу, недоотримання прибутку від реалізації казеїну в сумі 70,7 тис. грн. Але загалом за обома видами продукції одержано додаткового прибутку в сумі 1088,7 тис. грн. |
| Description: | Purpose: to identify the influence of the quality indicators of the harvested milk on its technological properties in the conditions of the State Enterprise "Aromat", a branch of the "Sumsky Dairy Plant" Research subject: dairy raw materials and their technological properties Research results: Therefore, the topic of the master's thesis is relevant, because it gives an opportunity to realistically assess the state of production and processing of milk. When applying the calculated coefficients, the revenue from the sale of cream increases significantly (by UAH 5,567.2 thousand) and slightly decreases from the sale of casein (by UAH 205.8 thousand) due to its underproduction. This fact determines the receipt of additional profit from the sale of cream in the amount of UAH 1,159.2 thousand. and, in turn, the lack of profit from the sale of casein in the amount of UAH 70.7 thousand. But in general, both types of products received additional profit in the amount of UAH 1,088.7 thousand. |
