dc.description	Purpose: The purpose of the work is to study the quality of milk (its biochemical composition) of cows of various breeds. Research results: Based on the results of research, it was established that milk obtained from Ukrainian brown dairy cows and Ukrainian black-spotted dairy cows under the same conditions meets the organoleptic characteristics of the standard. There was no interbreeding difference in the organoleptic characteristics of milk. The average content of somatic cells in the milk of first-born cows of the experimental herd can be defined as close to optimal. Cows of the Ukrainian brown dairy breed prevailed over cows of the Ukrainian black-spotted dairy breed in terms of fat content, protein content, dry matter content and dry skim milk residue and lactose in milk under the same conditions of keeping and feeding.	uk_UA
dc.description.abstract	Мета: Метою роботи є - дослідження якості молока (його біохімічного складу) корів різних порід. Результати досліджень: За результатами досліджень встановлено, що молоко, яке отримують від корів української бурої молочної та української чорно-рябої молочної порід в однакових умовах, відповідає за органолептичними ознаками стандарту. Міжпорідної різниці за органолептичними ознаками молока не встановлено. Середній вміст соматичних клітин у молоці корів-первісток піддослідного стада можна визначити як близький до оптимального. Корови української бурої молочної породи переважали корів української чорно-рябої молочної породи за вмістом жиру, вмістом білка, за вмістом сухої речовини та сухого знежиреного молочного залишку та лактози в молоці при однакових умовах утримання та годівлі.	uk_UA
