| Abstract: | The monograph presents the results of fundamental and applied research aimed at creating fundamentally new methods of tomato concentration in order to improve the quality and safety indicators of the finished product. The monograph can be useful for practitioners and scientists. The presented materials can be used in the educational process of The Bachelor's and Master's programs when studying the courses “nutrition technology”, “nutrition”, “processes and apparatuses of food and microbiological production”, “quality and safety of food products”. The research results will be useful for scientists who conduct research in Master's, postgraduate and doctoral programs. The monograph is published in three languages — Chinese, English and Ukrainian. Editions are identical. |
| Description: | У монографії наведено результати фундаментальних та прикладних досліджень направлених на створення принципово нових прийомів концентрування томатів з метою підвищення показників якості та безпечності готового продукту. Монографія може бути корисна для фахівців практиків та науковців. Викладені матеріали можливо використовувати в учбовому процесі за програмами «Бакалавр», «Магістр» при вивчанні курсів «Технологія харчування», «Нутриціологія», «Процеси та апарати харчових та мікробіологічних виробництв», «Якість та безпечність харчових продуктів». Результати досліджень будуть корисні науковцям, які проводять дослідження у магістратурі, аспірантурі та докторантурі. Монографія вкладена трьома мовами — Китайською, Англійською та Українською. Видання ідентичні. |
