| Abstract: | Мета дослідження полягає в залученні рослинних полісахаридів до рецептурної композиції десертної продукції. Це надасть не лише бажаних функціональних і технічних властивостей готовому продукту, а також і високі органолептичні показники. Дана технологія відрізняється від інших більш повним використанням спектру рослинних полісахаридів, що містять біологічно активні складові, забезпечуючи кращу засвоюваність організмом і дозволяючи отримати продукти підвищеної якості та харчової цінності. Під час досліджень вмісту поживних речовин у розробленій продукції було виявлено, що значно збільшився вміст біологічно активних речовин, що сприятливо вплинуло як на структурні показники готового продукту, так і на його функціональні властивості. |
| Description: | The aim of study is involved of plant polysaccharides in the recipe composition of dessert products. This will provide not only the desired functional and technical properties to the finished product, but also high organoleptic indicators. This technology differs from others in a more complete use of the spectrum of plant polysaccharides containing biologically active components, ensuring better digestibility by the body and allowing you to obtain products of increased quality and nutritional value. During studies of the nutrient content of the developed product, it was found that the content of biologically active substances significantly increased, which had a beneficial effect on both the structural indicators of the finished product and its functional properties. |
