| Abstract: | Метою кваліфікаційної роботи є удосконалення технології цукрового печива з використанням горіхових шротів. В роботі визначено технологічні та економічні аспекти виробництва печива з використанням горіхових шротів, проведено аналіз сучасних технологій цукрового печива з використанням горіхових шротів. Науково обґрунтовано вміст основних рецептурних компонентів у складі печива, вивчено вплив технологічних факторів на властивості модельної системи печива. Розроблено технологічну схему виробництва та рецептурний склад печива. Проведений аналіз технології та визначено небезпечні чинники, розроблено план НАССР для виробництва інноваційного продукту. Розраховано очікуваний економічний ефект від впровадження нового продукту. |
| Description: | The purpose of the qualification work is to improve the technology of sugar cookies using nut meals. The work identifies technological and economic aspects of the production of cookies using nut meals, analyzes modern technologies of sugar cookies using nut meals. The content of the main recipe components in the composition of cookies is scientifically substantiated, the influence of technological factors on the properties of the model cookie system is studied. A technological scheme of production and recipe composition of cookies are developed. An analysis of the technology is carried out and hazardous factors are identified, a HACCP plan for the production of an innovative product is developed. The expected economic effect from the introduction of a new product is calculated. |
