| Abstract: | Мета роботи - вивчення технології виробництва виробів із тіста, а саме заморожених тістових напівфабрикатів та проект цеху виробництва у місті Суми. Об’єкт – технологія виробництва заморожених тістових напівфабрикатів. Предмет – технологічні розрахунки та рецептури заморожених напівфабрикатів із тіста. В розділі І кваліфікаційної роботи було проведено характеристику і обґрунтування вибору місця проектування цеху. Проведено техніко-економічне обґрунтування вибору асортименту який планується проектом та обрані способи виробництва напівфабрикатів. У розділі ІІ кваліфікаційної роботи було виконано необхідні для проекту технологічні розрахунки, здійснено підбір та розрахунок необхідного, для реалізації проекту, основного обладнання та устаткування. Здійснено розрахунок площ виробничих, допоміжних приміщень. У розділі ІІІ було розроблено адаптовані під підприємство, що проектується технологічні схеми виробництва. У розділі ІV опрацьовані питання з охорони праці, проведений аналіз небезпечних чинників виробництва. У розділі V проведеними розрахунками економічної ефективності встановлено період окупності проекту – 4 місяців. |
| Description: | The purpose of the work is to study the technology of production of dough products, namely frozen dough semi-finished products and the design of a production workshop in the city of Sumy. The object is the technology of production of frozen dough semi-finished products. The subject is technological calculations and recipes of frozen dough semi-finished products. In section I of the qualification work, a description and justification of the choice of the design location of the workshop was carried out. A feasibility study was conducted to select the range planned by the project and the selected methods of production of semi-finished products. In section II of the qualification work, the technological calculations necessary for the project were performed, the selection and calculation of the main equipment and facilities necessary for the implementation of the project were carried out. The calculation of the areas of production and auxiliary premises was carried out. In section III, technological production schemes adapted to the enterprise being designed were developed. In section IV, issues of labor protection were worked out, and an analysis of hazardous production factors was carried out. In section V, the calculations of economic efficiency established the payback period of the project - 4 months. |
