| Abstract: | Мета роботи - вивчення технології виробництва кисломолочних продуктів та проєктний розрахунок цеху виробництва кисломолочних продуктів. Об’єкт – технологія виробництва кисломолочних продуктів. Предмет – технологічні розрахунки кисломолочних продуктів. В розділі І кваліфікаційної роботи було проведено характеристику і обґрунтування вибору місця проектування цеху. Проведено техніко-економічне обґрунтування вибору асортименту, який планується проєктом та обрані способи виробництва в умовах переробного підприємства. У розділі ІІ кваліфікаційної роботи було виконано необхідні для проекту технологічні розрахунки, здійснено підбір та розрахунок необхідного, для реалізації проекту, основного обладнання та устаткування. Здійснено розрахунок площ виробничих, допоміжних приміщень. У розділі ІІІ було розроблено адаптовані під підприємство, що проектується технологічні схеми виробництва. У розділі ІV опрацьовані питання з охорони праці, проведений аналіз небезпечних чинників виробництва. У розділі V проведеними розрахунками економічної ефективності встановлено період окупності проєкту – 2,7 років. |
| Description: | The purpose of the work is to study the technology of fermented milk products and to carry out the design calculations for a workshop for the production of fermented milk products. The object of study is the technology of fermented milk product production. The subject is the technological calculations for fermented milk products. In Section I of the qualification thesis, the characteristics and justification for the choice of the workshop's design location were provided. A technical and economic justification for the choice of the product range planned by the project was conducted, and the production methods under the conditions of a processing enterprise were selected. In Section II of the qualification thesis, the necessary technological calculations for the project were performed, and the main equipment and machinery required for the project's implementation were selected and calculated. The areas of the production and auxiliary premises were calculated. In Section III, technological production schemes adapted to the designed enterprise were developed. In Section IV, labor protection issues were addressed, and an analysis of hazardous production factors was conducted. In Section V, the calculations of economic efficiency established that the payback period of the project is 2.7 years. |
