| Abstract: | Мета роботи - розширення асортименту паштетів із риби та розробка проекту технологічного процесу для кафе на 50 місць та холодного цеху. В роботі проаналізовано технологію паштетів із риби на прикладі виробу-аналогу; удосконалено технологію та розроблено технологічну документацію на нові вироби – паштет Новинка. Обґрунтовано проект кафе на 50 місць, та розраховано холодний цех вказаного підприємства ресторанного господарства. Визначено основні заходи з охорони праці для роботи в кафе та холодного цеху в ньому. Розраховано економічну ефективність діяльності зазначеного закладу ресторанного господарства. |
| Description: | The purpose of the work is to expand the range of fish pate and develop a technological process project for a cafe for 50 seats and a cold shop. The work analyzes the technology of fish pate using the example of a similar product; improves the technology and develops technological documentation for new products - pate Novinka. The project of a cafe for 50 seats is substantiated, and the cold shop of the specified restaurant enterprise is calculated. The main occupational health and safety measures for work in a cafe and a cold shop in it are determined. The economic efficiency of the specified restaurant establishment was calculated. |
