| Abstract: | Мета роботи – розроблення проєкту чебуречної продуктивністю 200 шт на зміну. Об’єкт – технологія виробництва чебуреків. Предмет – чебуреки, м’ясна сировина, сир твердий, фаст-фуд, економічні показники. Перший розділ присвячено висвітленню структури та концепції закладу. Представлено аналіз асортименту та запропоновано рецептуру для виготовлення продукту. Розділ ІІ демонструє результати розрахунку витрат сировини для виробництва чебуреків, обладнання, допоміжних матеріалів та виробничої площі В розділі ІІІ розроблено технологічні карти на виготовлення чебуреків та опис технологічної схеми їх виготовлення. В розділі ІV запропоновано НАССР чебуречної. В розділі V представлено результати розрахунку економічних показників, роботи чебуречної. |
| Description: | The purpose of the work is to develop a project of a cheburek factory with a productivity of 200 pieces per shift. Object – technology of cheburek production. Subject – chebureks, meat raw materials, hard cheese, fast food, economic indicators. The first section is devoted to highlighting the structure and concept of the institution. An analysis of the assortment is presented and a recipe for the manufacture of the product is proposed. Section II demonstrates the results of calculating the costs of raw materials for the production of chebureks, equipment, auxiliary materials and production area In section III, technological maps for the production of chebureks and a description of the technological scheme for their production are developed. In section IV, the HACCP of chebureks is proposed. In section V, the results of calculating economic indicators and the work of chebureks are presented. |
