Abstract:
Метою кваліфікаційної роботи є удосконалення технології начинок з звикористанням пюре гарбуза.
В роботі визначено технологічні та економічні аспекти виробництва начинок, проведено аналіз сучасних технологій термостабільних начинок з пюре гарбуза. Науково обґрунтовано вміст основних рецептурних компонентів у складі начинок, вивчено вплив технологічних факторів на властивості модельної системи начинок. Розроблено технологічну схему виробництва та рецептурний склад начинки. Проведений аналіз технології та визначено небезпечні чинники, розроблено план НАССР для виробництва інноваційного продукту. Розраховано очікуваний економічний ефект від впровадження нового продукту.
Структура й обсяг кваліфікаційної роботи. Кваліфікаційна робота складається зі вступу, п’яти розділів, висновків, переліку використаних джерел, додатків. Матеріали роботи викладено на 64 сторінках друкованого тексту,що містять 21 таблицю, 4 рисунки. Список використаних джерел включає 49 найменувань.

The purpose of the qualification work is to improve the technology of fillings using pumpkin puree.
In the work, the technological and economic aspects of the production of fillings are determined, an analysis of modern technologies of heat-stable fillings from pumpkin puree is carried out. The content of the main recipe components in the composition of fillings was scientifically substantiated, the influence of technological factors on the properties of the model system of fillings was studied. The technological scheme of production and the recipe composition of the filling have been developed. An analysis of the technology was carried out and dangerous factors were identified, a HACCP plan for the production of an innovative product was developed. The expected economic effect from the introduction of a new product is calculated.
Structure and scope of qualification work. The qualification work consists of an introduction, five sections, conclusions, a list of used sources, and appendices. The materials of the work are laid out on the pages of the printed text, 64 pages, containing 21 tables, 4 figures. The list of used sources includes 49 items.
