Abstract:
Метою кваліфікаційної роботи є удосконалення технології холодних страв з риби з додаванням порошку кунжуту.
В роботі визначено технологічні та економічні аспекти виробництва холодних страв з риби з використанням порошку кунжуту, проведено аналіз сучасних технологій холодних страв з риби, а саме рулету рибного з додаванням порошку кунжуту.
Науково обґрунтовано вміст основних рецептурних компонентів у складі рулету рибного, вивчено вплив технологічних факторів на властивості модельної системи рулету рибного. Розроблено технологічну схему виробництва та рецептурний склад рулету рибного з додаванням порошку кунжуту. Проведений аналіз технології та визначено небезпечні чинники, розроблено план НАССР для виробництва інноваційного продукту. Розраховано очікуваний економічний ефект від впровадження нового продукту.

The work identifies the technological and economic aspects of the production of cold fish dishes using sesame powder, analyzes modern technologies for cold fish dishes, namely fish roll with the addition of sesame powder.
The content of the main recipe components in the composition of fish roll is scientifically substantiated, the influence of technological factors on the properties of the model system of fish roll is studied. A technological scheme of production and recipe composition of fish roll with the addition of sesame powder are developed. An analysis of the technology is carried out and hazardous factors are identified, a HACCP plan for the production of an innovative product is developed. The expected economic effect from the introduction of a new product is calculated.
