Abstract:
У першому розділі було проведено аналіз рецептурного складу та технологічної схеми виробництва традиційних страв із сиру кисломолочного, а також можливості використання вітграсу. Розроблено нову технологічну схему виробництва з оцінкою якісних показників нової сировини. У другому розділі обґрунтовано проект кафе «SMOLING» на 50 місць, аналіз ринку ресторанного господарства та вибір місця будівництва. Розроблено профіль закладу, виробничу програму та розраховано необхідну кількість сировини й обладнання. У третьому розділі проведено аналіз умов праці, виявлено потенційні небезпеки та розроблено систему управління охороною праці. Включено навчання персоналу та встановлення процедур безпеки для забезпечення безпечних умов праці. У четвертому розділі проведено економічний аналіз проектованого кафе, включаючи розрахунок виробничої потужності та капітальних вкладень. Розрахунки підтвердили економічну ефективність та перспективи розвитку кафе.

The first section analyzed the recipe composition and technological scheme for the production of traditional dishes from fermented milk cheese, as well as the possibility of using wheatgrass. A new technological scheme for production was developed with an assessment of the quality indicators of the new raw materials. The second section substantiated the project of the cafe "SMOLING" for 50 seats, analyzed the restaurant market and selected the construction site. The profile of the establishment, the production program and calculated the required amount of raw materials and equipment. The third section analyzed working conditions, identified potential hazards and developed an occupational health and safety management system. It included personnel training and the establishment of safety procedures to ensure safe working conditions. The fourth section conducted an economic analysis of the designed cafe, including the calculation of production capacity and capital investments. The calculations confirmed the economic efficiency and prospects for the development of the cafe.
